Northern California, the nation's hotbed of international cuisine, gives no recognition to its northern cousin. Amid all of the east-west fusion, crepes, and wine spritzers, the best Canadian food you'll find in the Bay Area is beer and canned salmon. It is truly a shame that this region has put blinders on and has chosen to ignore the cornucopia of taste from a little niche of the world, called Canada.

Canadian cuisine is truly as special and diverse as the Canadian landscape itself. From rugged and hearty meat and poultry dishes to satisfying comfort foods like poutine and nanaimo bars, you'll agree that the complex and rich ingredients serve up flavors that are simply delicious. Uniquely Canadian.

We have compiled some of our favourite recipes from back home for our fellow homesick Canadian brethren, wherever in the world you may be.

Canadian Muffin

Prep: 5 min, Cook: 5 min.

4 English muffins
4 slices Back Bacon, cooked
4 eggs, fried
4 slices American cheese

Prepare broiler. Top each bottom muffin half with Back bacon, egg and cheese. Broil 6 inches from heat 2 minutes or until cheese melts. Top with remaining muffin halves.



Maple Syrup Pie

Ingredients:

1/2 c Cold water
1/4 c Flour -- all purpose
1 c Maple syrup -- pure
1 Egg -- lightly beaten
2 tb Butter
1 Pie shell -- 8 " baked

Instructions:

1.Whisk water with flour until smooth; stir into syrup in small heavy saucepan.
2.Stir in egg; cook over medium -low heat, stirring, until thick, about 7 minutes.
3.Stir in butter until melted. Pour into pie shell. Let cool.


Slow Cooker Chicken Cola

1 whole chicken
1 cup ketchup
1 cup cola type soda pop
